From the Recipe Box One of My Mom’s Recipes!

We all have a favorite recipe our mom’s would make for us. Mine was my mom’s Oven Chop Suey Casserole, it was comfort food at it’s finest.

Ingredients:

1 lb. cubed veal or pork (or 1/2 lb of each)
3 tbls. shortening
1 medium onion, chopped
1 cup diced celery
2 tbls. green pepper (she didn’t always use the green pepper)
1 tbls. diced pimiento (she didn’t always use the pimiento)
1/2 cup uncooked rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 soup can water, 14oz
sliced mushrooms (drained)
2 tbls. soy sauce
1/2 cup chow mein noodles

Cooking Instructions:

Brown the meat in shortening over medium heat, stir in remaining ingredients.

Pour into a greased casserole 1 1/2 quart size. Bake in oven that has NOT BEEN PREHEATED at 350 degrees for 1 hour. Cover the first 20 minutes of baking time. Sprinkle the chow mein noodles over the top during the last 20 minutes of baking time.
