* Watkins Lemon Cream Bars *

1/3 cup Watkins Lemon dessert mix
1 egg
1/3 cup cooking oil
1 tsp lemon extract
1/3 cup sugar
1 egg
1 or 2 tsp Watkins Lemon Extract (depends on how lemony you would like it)
1/8 tsp Watkins Vanilla Extract
3/4 Cup chopped walnuts (optional)
1 cup reserve crumb mix
Ingredients for bottom layer:
1 package Yellow Cake Mix (use dry)
In bowl, combine dry cake mix, Watkins dessert mix, egg and oil. Mixing until crumbly. Remove 1 cup and add to it 1 tsp Watkins Lemon Extract set aside. Pat the remaining crumbs into an ungreased 9 x 13 pan. Bake at 350 for 15 minutes.
Filling Layer
1 package (8oz) cream cheese (room temp)
Beat together cream cheese, sugar, egg, Watkins vanilla and lemon extract until light and smooth. Spread over baked layer. Take the 1 cup of crumbly mixture you set aside and sprinkle over filling layer.
Topping
1 tsp Watkins Cinnamon
Combine Watkins Cinnamon and nuts and sprinkle that over the crumb topping.
Bake 15 mins or more until brown. Cool and cut into bars.
(You can use this basic recipe and change the flavor by adding any of of the following Dessert mixes such as: Butterscotch, chocolate, banana, etc.
